What do tilers charge

I would always charge per sq meter layed. Definitley not per sq meter used. Sometimes per day is more appropriate. I am certain that is the norm. But you should not be charged further for the extra wastage over and above the cost of the tiles used.

As there is always breakage and you shouldn't have to pay for them or if he has made a mistake. He gave you a quote he should stick to it. The other tilers are right in what they are saying, however I personally don't charge by the sq m for wall tiling only floor tiling,for wall tiling I charge for the materials at discount cost which keeps the total of the job down and I charge a reasonable day rate or part day if I am not going to be on the job all day.
